Recipe: Flourless Peanut Butter Chocolate Chip Cookies (gluten-free)

I typically adhere to a balanced eating pattern – meaning, I don’t follow a diet that eliminates anything. I just don’t eat what I don’t like. However, I know that for some people they need to eliminate some components of a food like gluten or whole aspects of food like dairy.

A friend of mine eats gluten-free because he notices he had better digestion when he does, so when he comes over I try to stick to meals and desserts that I know he can eat that don’t take a lot of extra work on my part. We have gluten free pasta so we can still have pasta night, we have gluten free pancake mix because we’ve been known to brunch around here, but we typically stick to more whole foods and possible some rice when he’s over.

He can have most ice creams and a few other treats, so I do try to experiment when he comes over. I’ve seen a few flourless cookie recipes and played with a bunch of them to get them down appropriately to only a few servings so that we don’t have a few dozen in the house – if we don’t need them.

What You’ll Need

  • 6 tablespoons of peanut butter of choice (I used Jif, I haven’t tried a “natural” peanut butter, so I can’t tell you how that would impact the cookies
  • 2 tablespoons of honey (liquid honey, not comb)
  • 1 egg white
  • 1/16 teaspoon of baking soda (if you have a 1/8 tsp, use about half of it)
  • (Optional) mini chocolate chips


1. Preheat oven to 350 degrees.

2. In a medium mixing bowl, combine peanut butter, honey and egg white with a fork. The mixture will be thick and fluffy.

3. Add in baking soda. I sprinkled it on top of the mixture before combining since it is such a small amount.

4. (Optional) Fold in mini chocolate chips. Mini’s work best because this is a small amount of cookie dough.

5. On a baking sheet, space out cookie dough balls a little bigger than a tablespoon. This should provide you with about 6 cookies.

6. Bake for about 8 to 10 minutes – keep your eye on them!

These came out super fluffy. In the past when I’ve done larger ratios of honey to peanut butter and they’ve come out a bit flatter, but still soft.
